There is something about grilled meat and football that just works. Throw in some good beer and good friends and you’ve got a large night in the works. I choose the grill for this recipe to get a nice smoky flavor and get some crispy char as the fat on the wings rendered. And man, was it on point!
This recipe is for about 4 pounds wings, perfect for Championship Sunday.
Marinade
8 ounces of Crabbie’s Ginger Beer (any ginger beer will work)
1/4 cup of low sodium soy sauce
1.5 teaspoons of red pepper flakes
1/4 of vegetable oil
I marinated the wings in two gallon bags for about 4 hours. Going in and flipping the bags over ever hour or so to make sure every piece was getting marinated evenly.
Set the grill to about medium high heat for the initial grill marks. Be sure to oil your grill grates before putting the wings on. A simple trick is to put a little oil in a bowl, fold up a paper towel or rag, then take some tongs and dip the towel in the oil and rub over the grates. This will ensure no sticking and some solid char marks.
As always, bring any meat to room temperature before grilling. Grill the wings on each side for about 10 minutes to get some nice markings from the high heat and seal in all the flavor you worked so hard to get from the marinade. Then drop the heat to medium low to allow the chicken to begin cooking through, about 20 minutes.
While these are doing their thing you can start on the glaze.
In a sauce pan bring the rest of the ginger beer, honey, soy sauce, fresh ginger and butter to a simmer and let reduce to a thick consistency – about 15 minutes.
Glaze
8 ounces of Crabbie’s Ginger Beer
1/4 a cup of low sodium soy sauce
2 tablespoons of honey
2 tablespoons of minced fresh ginger
3 tablespoons of butter
1 teaspoon of red pepper flakes
a touch of ghost pepper extract (any spicy pepper oil will do, if desired)
Pull the wings off the grill and toss in the glaze. Return wings to the grill on a foil lined baking sheet for about 10 minutes, until the chicken is nice and crispy.
Top the wings with some diced green onions and serve along side some homemade blue cheese dressing.
Blue Cheese Dressing
3/4 a cup of blue cheese
3 tablespoons of whole milk
3 tablespoons of sour cream
2 tablespoons of mayo
1 teaspoon of rice wine vinegar
1/4 teaspoon of natural sugar
fresh cracked black pepper
My buddy brought over some of Stone Brewing Company’s Delicious IPA and these wings paired wonderfully. Any nice IPA would be perfect with these guys. Enjoy!
